Vada Pav and Special Salad

Vada Pav is a satisfyingly spicy street food twist on the veggie burger. To make things even more delicious, I'll also show you how to make my signature salad, a tasty superfood treat of coriander, mint, parsley, bulgar wheat, mango, spring onion and pomegranate.

Having done the Fountainbridge Show for a while now in Edinburgh, I was both excited (and a little nervous) to do my #teaforatenner slot over in Glasgow for a larger combined audience. Bindi’s Salad

1\4 bunch Parsley (finely chopped)
1\4 bunch Mint (finely chopped)
1\4 bunch Coriander (finely chopped)
100gm of Bulgier Wheat (soak in water)
3 Spring Onions chopped
1\2 Red Pepper chopped
1 Lemon
1\2 Mango shredded
1\2 tbsp. Course Black Pepper
1\2 tbsp. of Salt
3 tbsp. of jaggery (soak Jaggery in warm water)

 

Vada Pav

6 Rolls
3 medium sized boiled and peeled mashed potatoes
2 tsp. Mixed Ginger/Green chilli paste
1/4 tsp. Garam Malasa
1 tbsp. chopped Coriander
2 finely chopped Onions
2 tsp. Lemon juice
2 tsp. Sugar
Salt to taste
1/4 tsp. Chilli powder               
1 tbsp. Oil
A pinch of asafoetida (hing)  
Salt to taste
Oil for deep-frying

Method:

Mix all the ingredients together and before serving a spoonful of jaggery water is used as dressing.

Method:

Mix 1 cup Chick Pea flour (gram flour) with ½ cup of water, a pinch of salt to taste, chilli powder and a pinch of asafoetida.

Big in Belgium ;-)

Gosh, it seems like such a long time since I've written one of these - it's been all go!

Last time, I told you about my regular pop ups at the fabulous Mini Louise bar in Brussels.  I'm delighted to say that these events were so popular, we even got some coverage on European TV!

Popping up all over - Bindi hits Belgium

Holi celebrations at Bindi

We're celebrating Holi, the festival of colours at Bindi on Sunday 16th from 2pm-6pm.  It's an important date in the Hindu calendar, and usually a lot of fun!  

Holi is a celebration of love and the triumph of good over evil, it has a huge cultural significance for us.  The vibrant celebration is now observed in many European capitals and is enjoyed as a very inclusive and positive celebration, helping bring people from different communities together in a way that is positive and fun.

We'll be putting together a special menu for the day and, pending permission, enjoying a little colour play at the restaurant.  We'd love you to join us.  (£10/per person including meal)

Happy New Year!

I'm looking forward to seeing everyone who has booked in for our special menu over the New Year period - and probably quite a few who just stop in for some sustenance on the way to the fireworks.

Christmas opening, cookery classes and treats to take away

Wow Christmas is a busy time of year.  Especially at lunchtimes we've been seeing folk coming in for a break from the holiday madness, a cup of chai and a tasty lunch - if it sounds tempting, we'd love to see you!

We've decided to open on Christmas Day this year to rescue anyone who fancies a change from turkey - it's strictly by advance booking only, but we're taking reservations up to and including Christmas Eve.

For anyone who's been too busy to finish their Christmas shopping, fear not - I might be able to help.  Our cookery classes start in January and you can buy Gift Vouchers for a class with Bindiya at our Newington restaurant.  You'll be able to learn how to cook some traditional, tasty Indian vegetarian cuisine to take home and be treated to a sit-down dinner afterwards.

If dinner on  its own is more your speed, we offer gift vouchers for a meal and beverage from £25 which are the perfect size to slip into a last minute card!  They're available for collection from the restaurant at 44-45 St Patrick Square.

The Scotsman, Mondays and Christmas menus!

Loved our review in the Scotsman and very chuffed with all the love on Yelp.com and twitter.  It's all go at Bindi right now!  We have some great 'regulars' already and have been delighted to welcome many of their friends and families for lunch and dinner.

Over the festive season, we're kicking things up a gear and opening on Monday evenings too - specifically for everyone who thinks that Monday's are hard enough without having to cook dinner too.  Pamper yourself and come here for some home cooked food and a  soothing after-work chai.

Our Christmas Banquet menu is also out now - we're just waiting for copies from our printers.  A sneak preview will go out on social media soon, but you can find it first here.  2 different menus to choose from with dishes to delight every palate.  See you all soon!

And the award goes to...

What a brilliant week!

Not only did @lunchquest award us their number 1 spot for their Top in 2013 list (thank you!) but our very good friends at the Edinburgh School of Food & Wine have been awarded the prestigious Best Cookery School in Scotland award!

We always knew they were brilliant, but now everyone else does too! They were also runner up for "Top Cookery School in the UK" at the London awards ceremony last night.

We've always enjoyed our relationship with the School and are so grateful for the practical help, support and encouragement Iain and his fantastic team have provided not only with our Secrets of Spices events at ESFW, but also in getting things up and running here at Bindi in Newington. A huge, huge CONGRATULATIONS to you!

Hirayali Paratha

Thanks to everyone who has made us so busy over the last few days - I must keep up with the blog too!  It's been super-busy and we're pulling together the programme for our first cookery courses with our friends at the Edinburgh School of Food and Wine.

Classes should begin in December/January, so keep an eye on this blog as well as our facebook and twitter to know when it's possible to book in!  We'll also offer gift vouchers for both dining at Bindi in Newington or taking part in one of our classes, so if your mind is turning to Christmas shopping, we can promise something very special!

We've met some great new people in our journey so far and have been so incredibly encouraged by all the kind comments, social media love and reviews that people have submitted - thank you all, we love hearing from you.

Yesterday I was sad to learn that Tarla Dalal, an amazing Indian cook who has inspired millions of people, myself included, passed away.  I decided to make her Hirayali Paratha as a special today to remember her in some little way.  She has written over 100 cookery books over the years and I would recommend any of them very highly to anyone who wants to experiment with healthy vegetarian cuisine.

Well, that's all for now - we're getting things ready for our dinner guests this evening, I hope you can join us!

Prepare for launch

It's been an incredible journey.

From finding the perfect location for our new restaurant to building our sparkling new kitchen, it's been a really busy time.

 Bindi is about food, friends and family.

Without the last two, I'm not sure we'd be where we are today.  I want to thank everyone for all the thinking, cleaning, painting, plumbing, plastering, electrifying, designing, printing, writing, and supporting that has made our Grand Opening possible on 1st November at 4:30pm.

I hope as many of you as possible will be able to join us - but don't worry, our first week will be full of special dishes, discounts and taster sessions, so be sure to stop by whenever you can. 

I can't wait to see you.
